Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 large carrots, chopped
  • 2 stalks celery, chopped
  • 1 cup green beans, chopped
  • 4 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 cups potatoes, cubed
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 cup frozen corn or peas
  • 2 cups spinach, fresh
  • 1 tbsp lemon juice

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5-7 minutes.
  • Add garlic and cook for 1 minute. Add potatoes, green beans, tomatoes, broth, thyme, and oregano.
  • Bring to a boil, then reduce heat and simmer for 25 minutes or until potatoes are tender.
  • Stir in corn/peas and cook for 5 minutes. Remove from heat and stir in spinach and lemon juice.

Notes

Add pasta or quinoa separately to keep the broth from disappearing. Freezes well for up to 3 months.
