Ingredients
  

  • 6 large Eggs
  • 1 cup Cottage cheese (full fat)
  • 1 cup Gruyère cheese, shredded
  • 4 slices Bacon, cooked and chopped
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions
 

  • Preheat oven to 300°F. Place water bath on bottom rack.
  • Blend eggs, cottage cheese, salt, and pepper until smooth.
  • Place bacon and cheese in silicone muffin cups.
  • Pour egg mixture into cups. Bake 25-30 mins.

Notes

Use a silicone pan for easy removal. The water bath in the oven creates the creamy texture.
