Ingredients
  

  • 1 lb rigatoni pasta
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup tomato paste
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1 tbsp fresh basil, chopped

Instructions
 

  • Cook rigatoni in salted boiling water until al dente. Reserve 1/2 cup pasta water.
  • Sauté onion in olive oil until soft. Add garlic and red pepper flakes; cook 1 minute.
  • Add tomato paste and cook, stirring frequently, for 3-5 minutes until it darkens in color.
  • Lower heat, stir in heavy cream until smooth. Add drained pasta and parmesan, tossing to coat. Add pasta water if too thick.

Notes

Adjust red pepper flakes to your preferred spice level.
