Ingredients
  

  • 2 lbs Beef chuck roast, cubed
  • 2 tbsp Olive oil
  • 1 large Onion, chopped
  • 3 cups Potatoes, diced
  • 3 large Carrots, sliced
  • 2 stalks Celery, sliced
  • 6 cups Beef broth
  • 1 can Diced tomatoes (14 oz)
  • 1 cup Frozen green beans
  • 1 cup Frozen corn
  • 1 tbsp Worcestershire sauce

Instructions
 

  • Sear beef cubes in oil in a large pot. Remove.
  • Sauté onion, carrots, and celery. Add garlic.
  • Return beef. Add broth, tomatoes, potatoes, and seasonings. Simmer 45-60 mins.
  • Add green beans and corn. Cook 15 mins.

Notes

Sear the beef in batches for maximum flavor. Simmer gently to keep meat tender.
