Ingredients
  

  • 1 lb spaghetti or linguine
  • 6 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 3/4 cup parmesan cheese, freshly grated
  • 1/4 cup fresh parsley, chopped
  • 1 cup pasta water (reserved)

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  • In a large skillet, melt butter over medium heat. Add minced garlic and red pepper flakes. Sauté for 2-3 minutes until fragrant but not browned.
  • Add the drained pasta directly to the skillet. Pour in 1/2 cup of reserved pasta water and half the parmesan cheese.
  • Toss vigorously with tongs until a creamy sauce forms, adding more pasta water if needed. Stir in parsley and remaining cheese. Serve hot.

Notes

Save more pasta water than you think you need; it is the key to a creamy sauce.
