Ingredients
  

  • 2 cups Cooked chicken, shredded (or rotisserie)
  • 1 tbsp Olive oil
  • 1 medium Onion, chopped
  • 3 large Carrots, sliced
  • 2 stalks Celery, chopped
  • 2 cloves Garlic, minced
  • 6 cups Chicken broth
  • 2 cups Egg noodles (uncooked)
  • 1 tsp Dried thyme
  • 1 tbsp Lemon juice

Instructions
 

  • Sauté onion, carrots, and celery in oil until soft (5-7 mins).
  • Add garlic and thyme. Cook 1 min. Add broth and boil.
  • Add noodles and chicken. Simmer 8-10 mins until noodles are tender.
  • Stir in lemon juice and parsley. Serve.

Notes

For leftovers, store noodles separately to prevent them from getting soggy. Add lemon juice for brightness.
