Ingredients
  

  • 2 1/4 cups cake flour, sifted
  • 1 1/2 cups granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk, room temperature
  • 2 large eggs, room temperature
  • 1/4 cup sour cream or greek yogurt
  • 2 tsp pure vanilla extract
  • 1/2 cup rainbow sprinkles (jimmies)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  • In a medium bowl, whisk together cake flour, baking powder, and salt.
  • In a large bowl or stand mixer, cream butter and sugar until pale and fluffy (3-4 mins).
  • Add eggs one at a time, then mix in vanilla and sour cream.
  • Alternate adding the flour mixture and milk to the batter, starting and ending with flour.
  • Gently fold in the sprinkles by hand.
  • Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely before frosting.

Notes

Use 'jimmies' (rod-shaped sprinkles) rather than nonpareils to prevent color bleeding.
