Ingredients
  

  • 8 oz pasta shells or rotini
  • 1 lb boneless skinless chicken breasts, cubed
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 4 oz cream cheese, softened and cubed
  • 1/2 cup chicken broth
  • 3/4 cup milk (whole or 2%)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Boil the pasta in salted water according to package directions until al dente. Drain and set aside.
  • Heat oil in a large skillet over medium-high heat. Add cubed chicken and season with onion powder, salt, and pepper. Cook for 5-7 minutes until browned and cooked through. Remove to a plate.
  • Reduce heat to medium. Add butter and garlic. Sauté for 1 minute.
  • Pour in chicken broth and milk. Bring to a simmer.
  • Add the cubed cream cheese and whisk constantly until completely melted and smooth.
  • Remove the pan from the heat. Stir in the cheddar and mozzarella cheese until melted.
  • Add the cooked chicken and pasta back to the skillet. Toss to coat in the cheese sauce.
  • Garnish with green onions or parsley if desired and serve immediately.

Notes

Ensure cream cheese is at room temperature to prevent lumps in the sauce.
