Creamy Cajun Chicken Pasta

Ingredients
  

  • 8 oz linguine or fettuccine
  • 1 lb chicken breasts, sliced into strips
  • 2 tbsp Cajun seasoning, divided
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1/2 medium red onion, sliced
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup pasta water (reserved)
  • 2 tbsp green onions, chopped

Instructions
 

  • Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  • Toss chicken strips with 1 tbsp of Cajun seasoning until coated.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side until blackened and cooked through. Remove to a plate.
  • Add butter, peppers, and onions to the skillet. Sauté for 3-4 minutes until slightly softened.
  • Add garlic and sauté for 1 minute.
  • Pour in heavy cream and remaining 1 tbsp Cajun seasoning. Simmer for 3-5 minutes until thickened.
  • Stir in parmesan cheese. Add cooked pasta and chicken back to the pan. Toss to coat, adding reserved pasta water if the sauce is too thick.
  • Garnish with green onions and serve.

Notes

Adjust the cayenne pepper in the Cajun seasoning to control the heat level.
