Ingredients
  

  • 1 lb Breakfast sausage
  • 1 bag Frozen hash browns (30 oz), thawed
  • 8 large Eggs
  • 1 cup Milk
  • 1/2 cup Sour cream
  • 2 cups Cheddar cheese, shredded
  • 1 medium Onion, diced
  • 1 medium Green bell pepper, diced

Instructions
 

  • Preheat oven to 375°F. Grease 9x13 dish.
  • Cook sausage, onion, and pepper in skillet until browned.
  • Layer hash browns, sausage mix, and cheese in dish.
  • Whisk eggs, milk, sour cream. Pour over dish.
  • Bake 45-55 mins until set.

Notes

Thaw hash browns and squeeze out excess moisture for the best texture. Let rest before slicing.
