Ingredients
  

  • 1 lb smoked sausage (Kielbasa), sliced
  • 1 lb baby potatoes, halved
  • 2 cups bell peppers, chopped
  • 1 medium red onion, chopped
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with parchment.
  • Chop potatoes, peppers, and onions. Slice sausage.
  • Place everything on the sheet pan. Drizzle with oil and seasonings. Toss to coat.
  • Spread in a single layer. Roast for 25-30 minutes, tossing halfway through.
  • Serve hot.
