Ingredients
  

  • 2 large English cucumbers, thinly sliced
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tsp sugar
  • 1 clove garlic, minced
  • 1 tsp sesame seeds
  • 1/2 tsp red pepper flakes (optional)

Instructions
 

  • Wash and thinly slice the cucumbers. Place in a bowl with a pinch of salt.
  • Let sit for 10 minutes to draw out water, then drain and pat dry.
  • Whisk rice vinegar, soy sauce, sesame oil, sugar, and garlic in a small bowl.
  • Pour dressing over cucumbers and toss to coat. Garnish with sesame seeds.
  • Serve immediately or chill for 15 minutes.
