Ingredients
  

  • 32 oz frozen diced hash browns
  • 1 lb breakfast sausage
  • 1 cup onion, diced
  • 1 cup bell pepper, diced
  • 2 cups cheddar cheese, shredded
  • 8 large eggs
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.
  • In a skillet, cook sausage, onion, and peppers until meat is browned. Drain fat.
  • Spread frozen potatoes in the dish. Season with salt/pepper. Top with meat mixture and cheese.
  • Whisk eggs, milk, and spices. Pour over the casserole.
  • Cover with foil and bake 20 mins. Remove foil and bake 20-25 mins more until set.
