Ingredients
  

  • 3 cups cooked Jasmine rice, chilled
  • 2 large eggs, beaten
  • 1 cup frozen peas and carrots
  • 3 tbsp soy sauce
  • 1 tsp sesame oil

Instructions
 

  • Scramble eggs in oil. Remove and set aside.
  • Sauté garlic, ginger, and vegetables until tender.
  • Add chilled rice and stir-fry on high heat for 3-5 minutes.
  • Stir in soy sauce and sesame oil. Add eggs back in and serve.
