Ingredients
  

  • 14 oz smoked sausage (kielbasa or andouille), sliced
  • 1.5 lbs baby red or Yukon gold potatoes, cubed
  • 3 tablespoons olive oil
  • 1 packet (1 oz) Ranch seasoning mix
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons fresh chives, chopped (optional)

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment or foil.
  • Toss potatoes, sausage, olive oil, and ranch seasoning in a bowl until coated.
  • Spread in a single layer on the baking sheet. Bake for 30-35 mins, flipping halfway.
  • Once potatoes are tender, sprinkle cheese over the top. Bake 2-3 mins until melted.
  • Garnish with chives and serve hot.
