Ingredients
  

  • 2 lbs bone-in chicken thighs or legs
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 3 medium carrots, sliced
  • 3 stalks celery, sliced
  • 8 cups water or chicken broth
  • 1 teaspoon dried thyme
  • 1 package (12 oz) wide egg noodles
  • 0.25 cup fresh parsley, chopped

Instructions
 

  • Heat oil in a large pot. Season chicken and sear until golden brown. Remove chicken.
  • Add onion, carrots, and celery to the pot. Sauté for 5 minutes.
  • Return chicken to pot. Add water/broth, thyme, bay leaf. Bring to boil, reduce heat, and simmer 45-60 mins.
  • Remove chicken, shred meat, discard bones. Return meat to pot.
  • Add egg noodles and cook for 6-8 minutes until tender. Stir in parsley and serve.
