Ingredients
  

  • 6 slices bacon, chopped
  • 4 lbs Russet potatoes, cubed
  • 1 onion onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup sour cream
  • 1.5 cups cheddar cheese

Instructions
 

  • Cook bacon. Sauté onion in fat.
  • Add broth, cream, and potatoes. Simmer 20 mins.
  • Mash partially. Stir in sour cream and cheese.
  • Serve topped with bacon and chives.
