Ingredients
  

  • 1 lb Andouille sausage, sliced
  • 2 lbs Yukon Gold potatoes, cubed
  • 1 large onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp Cajun seasoning
  • 3 tbsp flour

Instructions
 

  • Brown sliced sausage in a large pot. Remove and set aside.
  • Sauté onion, pepper, and celery in the rendered fat until soft.
  • Stir in garlic, Cajun seasoning, and flour. Cook for 1 minute.
  • Whisk in chicken broth. Add potatoes. Bring to a boil.
  • Simmer for 15-20 minutes until potatoes are tender.
  • Mash some potatoes to thicken. Stir in cream and sausage.
  • Simmer 5 minutes and serve.
