Ingredients
  

  • 2 cups Pancake mix (complete or buttermilk)
  • 1 cup Water or Milk
  • 0.25 cup Maple syrup
  • 1 lb Breakfast sausage, cooked and crumbled
  • 1 cup Cheddar cheese, shredded
  • 1 large Egg (optional for fluffiness)

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a mini muffin tin well.
  • Cook sausage in a skillet until browned; drain grease.
  • In a bowl, mix pancake mix, milk/water, egg, and syrup.
  • Fold in the cooked sausage and cheese.
  • Scoop into muffin tins (3/4 full).
  • Bake 10-12 minutes until golden.
  • Serve warm with extra syrup for dipping.
