Ingredients
  

  • 1.5 cups rolled oats
  • 1 cup mixed nuts and seeds (almonds, pumpkin, sunflower)
  • 2 tbsp chia seeds
  • 0.5 cup nut butter (almond or peanut)
  • 0.33 cup honey
  • 0.25 cup dried cranberries
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 325°F (160°C). Mix oats, nuts, seeds, and dried fruit in a bowl.
  • Warm nut butter and honey. Stir in vanilla.
  • Combine wet and dry ingredients until sticky.
  • Press mixture firmly into cookie shapes on a baking sheet.
  • Bake for 12-15 minutes. Cool completely to firm up.
