  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 tsp cinnamon
  • 1 cup carrots, finely grated
  • 0.5 cup butter, melted
  • 0.5 cup brown sugar
  • 1 large egg
  • 0.5 cup walnuts, chopped
  • 2 tbsp cream cheese (for glaze)
  • 0.5 cup powdered sugar (for glaze)

Instructions
 

  • Preheat oven to 350°F. Finely grate carrots.
  • Mix melted butter, sugar, egg, and vanilla.
  • Stir in flour, oats, spices, and baking powder.
  • Fold in carrots and walnuts. Scoop onto baking sheet.
  • Bake 11-13 mins. Cool and drizzle with glaze.
