Ingredients
  

  • 3 lbs chicken thighs (bone-in or boneless)
  • 1 cup pineapple juice
  • 0.5 cup soy sauce (low sodium)
  • 0.5 cup brown sugar, packed
  • 0.25 cup ketchup
  • 0.25 cup chicken broth
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced

Instructions
 

  • Whisk pineapple juice, soy sauce, sugar, ketchup, broth, ginger, and garlic.
  • Reserve 1/2 cup of marinade for basting. Pour rest over chicken.
  • Refrigerate chicken for at least 3 hours.
  • Grill or bake chicken at 400°F until cooked through (165°F).
  • Baste with reserved sauce frequently during cooking.
