Why This Recipe Works

  • A key component in the no-bake process is the formation of a lattice structure by the binding agents, such as the peanut butter and the marshmallows, which ultimately contribute to the structure’s strength and cohesiveness.
  • This recipe eliminates the need for an oven or lengthy cooking times, and all that’s required is some simple melting, mixing, and assembly.
  • The combination of peanut butter, graham cracker crumbs, and marshmallows ensures a harmonious balance of sweet and salty flavors.

Key Ingredients

Finding the perfect peanut butter makes all the difference. Natural-style peanut butters will have a more pronounced peanut flavor. Using quick-melt marshmallows, such as Kraft Jet-Puffed, results in a fudge-like texture.

Be mindful of the consistency of your peanut butter. If your peanut butter is very runny, adding more graham cracker crumbs may help to achieve a perfect mixture.

Yield:
4 Servings

Ingredients

1 1/2 cups creamy peanut butter

1/4 cup granulated sugar

2 cups Quick-Melt Marshmallows

1/2 cup Unsalted Butter, Melted

1/2 cup Graham Cracker Crumbs

3 cups Cheerios

Optional Toppings: Sea Salt or Confectioners’ Sugar

Directions

1
To ensure that your marshmallows and chocolate do not burn or stick to your equipment, melt them using a microwave-safe bowl. Start with a 15-second interval, and continue to increase the melt time in increments of 10 seconds, stirring after each interval, until completely melted and smooth.

2
In a separate, large-sized mixing bowl, melt the peanut butter in short increments, stirring and checking after each melt, until you achieve a smooth consistency.

3
Combine the melted peanut butter and sugar; stir well until they are fully incorporated.

4
Add in the graham cracker crumbs and mix until the crumbs start to bind to the peanut butter, but it still looks somewhat coarse.

5
Slowly incorporate the melted marshmallow mixture with the peanut butter mixture, stirring until there are not any streaks of marshmallow left. This may take about a minute of patiently mixing by hand or two minutes using a slow-moving stand mixer.

Storage & Reheating

Store these treats in an airtight container at room temperature for four days. Refrigerating or freezing them will result in a bar that’s slightly firmer and less chewy. Let refrigerated or frozen bars come to room temperature before eating for an optimal mouthfeel and texture.
