Warm Creamy Sausage Potato Soup Recipe for Winter Dinner (Servings: 6-8)

Get comfort food right in your own home with this easy sausage potato soup recipe, made to fuel warm winter nights and filled with an appetizing array of aromatic herbs and pan-seared chucks of delectable sausage.

Ingredients

• ▢ 500g smoked sausage, sliced
• ▢ 2 tablespoons olive oil
• ▢ 1 onion, diced
• ▢ 3 cloves garlic, minced
• ▢ 500g diced potatoes
• ▢ 500g chopped carrots
• ▢ 200ml chicken broth
• ▢ 150ml heavy cream
• ▢ 1 teaspoon dried thyme
• ▢ 1 teaspoon dried rosemary
• ▢ Salt and pepper to taste

Instructions

• Heat a large saucepan over medium-high heat, and then add oil. Cook the sliced sausage, breaking with spoon until browned, about 5 minutes.
• Remove sausage from the saucepan and cook onion and garlic until the onion is translucent, about 3 minutes.
• Add to saucepan the chopped carrots, diced potatoes, chicken broth, salt, and pepper. Cook over medium heat, stirring periodically until potatoes are tender, about 20-25 minutes.
• Add to saucepan dried thyme, dried rosemary, cooked sausage, and heavy cream. Simmer for around 10 minutes to meld the flavors.
• Taste the soup for the final time and add more salt, pepper, and herbs if needed. Serve the creamy sausage potato soup warm and enjoy.
