Ingredients

4 cod fillets (6 ounces each)

2 lemons, juiced

2 cloves garlic, minced

1 cup heavy cream

2 tablespoons unsalted butter

2 tablespoons chopped fresh parsley

Salt and pepper to taste

Directions

1
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil, and place the cod fillets on it.

2
In a small bowl, whisk together the lemon juice, garlic, and heavy cream. Brush the mixture evenly over the cod fillets, making sure they’re fully coated.

3
Dot the top of each cod fillet with butter, then sprinkle with parsley and season with salt and pepper to taste.

4
Bake the cod in the preheated oven for 12-15 minutes, or until it’s cooked through and flakes easily with a fork.

5
Remove the cod from the oven and let it rest for a few minutes before serving. Serve hot, garnished with additional parsley if desired.

Storage & Reheating

To store leftovers, place the cooked cod in an airtight container in the refrigerator for up to 3 days. Reheat the cod in the oven at 350°F (175°C) for 5-7 minutes, or until it’s warmed through. You can also reheat the cod in the microwave, but be careful not to overheat it.
