Ingredients

2 ¾ cups (315g) cake flour

2 teaspoons baking powder

1 teaspoon kosher salt

1 cup (200g) granulated sugar

2 large eggs, at room temperature

2 teaspoons pure vanilla extract

1 cup (235ml) whole milk, at room temperature

Directions

1
Preheat your oven to 350°F (180°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper.

2
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3
In a large bowl, using an electric mixer, beat the sugar and eggs until light and fluffy, about 3 minutes.

4
With the mixer on low speed, gradually add the flour mixture to the wet ingredients and mix until just combined.

5
Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center of each cake comes out clean.

Storage & Reheating

To store leftovers, allow the cake to cool completely, then wrap it tightly in plastic wrap and refrigerate for up to 3 days. To reheat, simply slice the cake and microwave for 10-15 seconds, or until warmed through.
